Sandy's CARAMEL


Sandy's Caramel for Pretzel Rods
2c sugar
1c Karo syrup, light
3c heavy cream
dash salt
1t vanilla
Add sugar, syrup, salt, and 1c cream together, use large saucepan over med heat. Bring to 235*, stirring. I like to use the new Wilton Silicone Spatula.
Drizzle in 1c cream, return to 235*, stirring.
Drizzle in last cup of cream & stir to 235*.
Remove from heat, add vanilla.
Pour into lightly buttered 9x13 pan, let cool.
Along the 9" side of pan, cut sliver strips of caramel & twist onto rods. Place on parchment paper. Slice and wrap all the rods.
Melt choc & drizzle onto rods with fork. Immediately roll in chopped pecans.
Makes at least 50 Rods.
